What is Cassia Gum?
Cassia Gum is manufactured from the endosperm of Senna Obtusifolia, Cassia Tora or Cassia Occidentalis. It is mainly used as a thickener and gelling agent in food and pet food. Cassia grows mainly in subtropical regions mostly wild, but is occasionally cultivated.
Cassia Gum is comprised of at least 75% polysaccharide, consisting primarily of a linear backbone chain of mannose with side galactose units, The ratio of Mannose : Galactose is about 5: 1.
Cassia Gum, like LBG, can form gels with other colloids like Carrageenan and Xanthan and therefore is used in producing gel for food and pet food applications in combinaton with other colloids.
Cassia Gum powder is also known as Cassia powder, Cassia Tora powder, Cassia Tora splits powder, Cassia Gum split powder.
Cassia splits powder is often used in conjunction with Carrageenan to replace the use of Locust Bean Gum, Carob Gum or Guar Gum Splits. They are mostly used in preparing air fresheners in the form of gels.
Cassia Gum is used as a thickener, emulsifier, foam stabilizer, moisture retention agent and texturising agent in cheese, frozen dairy desserts, mixes and poultry products. They are used in all meat containing dishes including salads, appetizers, frozen multi course meat meals and sandwich ingredients, prepared by commercial processing or using commercially processed meats with home preparation.
